The Recipe That Kept Changing

A family restaurant in Chiayi has served the same beef noodle soup for fifty years, yet the 11 has never stopped changing. The founder wrote everything down; his daughter added star anise; his grandson took it out again. What matters, the grandson says, is not the list of 12 but the balance of 13 at the end. Customers who ate there as children often say the soup tastes exactly as they remember, which is impossible—the beef itself comes from a different farm now. Why Bars Are Getting Quieter

Across Europe, sales of beer and 16 have fallen among people under thirty for eight years in a row. Bar owners first blamed the price. Researchers who studied the change found something else: young adults simply meet in different places. A café stays open late, keeps the music quiet, and lets people talk. Many bars now serve drinks with no 17 at all, and one chain reports that these make up a fifth of sales. The word 18 has almost vanished from advertisements. Whether the change is good for 19 is still debated, but nobody now describes it as a passing 20.
